Where’s Henry???

  This is the single most popular question in our house lately.  When the sun is shining and it’s above 50 degrees out,  he will not be confined to the indoors!  This is usually where I find him.

Meatless Fridays

Hosted by Ruth.  Thanks so  much for compiling these Ruth,  they all look so good!  Here is my meager contribution for a meatless lunch.  The children and I enjoy this throughout the year!

 Migas 

(from Catholic Traditions in Cooking, by Ann Ball)

1/2 large onion, chopped

10 eggs

1/2 c. cold water

1/4 tsp. red pepper

1/4 tsp. salt

1/4 tsp. garlic powder

1 tsp. cumin

6 corn tortillas, torn in to pieces.

6 oz. Monterey Jack cheese, (or cheddar), grated

oil to cover bottom of skillet

  Brown onions in oil on medium heat in a large skillet.  Add tortillas and cook for a few minutes, stirring constantly, to warm thoroughly.  Beat eggs with water and spices.  Pour in skillet and cook on low heat, covered, for about ten minutes or until eggs are set.  Stir once.  Sprinkle cheese on top.   Cover and continue cooking until cheese melts.

My Kitchen Sink

    Margaret was hosting this lovely blog carnival.  Please take a moment and pray for Margaret and her family.  The have suffered a deep and sorrowful loss recently.    Pray that they feel the peace and love that God has for them. 

 Theresa  has also gathered all these great posts for us to share the view from our kitchen sinks. 

  This is the spot in my house where you can find me about ninety five percent of the time.     This is my first stop each morning,  and usually my last stop each night.  These lyrics from Marie Bellets “Without You” come to mind:

     “I am a woman staring at the sink.  I cannot think, or understand.  Where did it go, I hardly even blinked,  and now the day slipped through my hands.  Oh please, grant me a new start, with a fresh and fervent heart, help me.  I know, that without out You,  I can do nothing.  Oh but with you,  I can do anything.  Without You,  I am a clanging nagging noise.  Oh but with You I’ll raise girls and boys.”

  This is the real live, unadulterated view of my sink!  Stacked clean dishes,  tea tins, a jar of honey,  various prayers posted,  and my dear crucifix.   Thanks for visiting!

Thankful Thursdays

Ten Things I am Thankful for This week:

1.  I am thankful for Diane,  who so graciously volunteered to host this weeks carnival.  My mouse died and as soon as I said I would not be able to host,  she volunteered!

2.  A new mouse!  How aggravating it was to be unable to right click! 

3.  I’m thankful that we have no place to go this cold and rainy morning.  We will hunker down and read some good books!

4.  My digital camera!  I had no idea how much I’d enjoy using it nor how much I’d enjoy blogging.  In the past I’ve been awful about taking and saving pictures of my family.  It always seemed like and extra thing to do that I never got around to.  Now,  It’s so easy and so much fun to chronicle how my children are growing and learning!  (Thank you to my father in law for giving me the camera as an unexpected gift!)

5.  For my new little nephew, Caleb Thomas!  He was born on Monday, November 13, weighing 8lbs. 5oz.  and 20″ long.  He is strong, healthy, and sure to add to the growing joyful chaos with his brother Joshua in my brother and sister-in-laws home! :)

6.  I am thankful that my grandmother and grandfather are out of the hospital and healing from the terrible car accident they were involved in last week. 

7.  The friendships formed at the RealLearning forums.  There is such a wealth of wisdom, experience, and knowledge in the women there.  I am inspired daily in my vocation as a wife, mother, and home educator. 

8.  A fresh box of crayolas to keep my toddlers busy for long stretches of time! 

9.  Mr. Clean Magic Sponges to clean up the mishaps from #8! :)

10.  Our beautiful parish and the opportunity to go to confession before each and every mass.  Never an excuse not to go! 

This Little Piggy…

Rebecca is collecting photos of itty bitty baby feet.  I just took these of Miss Mae last week.  It was the first time she sat in her high chair.  Rebecca,  if you like dimply chubby feet,  I’ll have to post a picture of Henry’s feet – that boy has some stompers! :)     Do visit Babylove,  it’s the sweetest spot on the web! :)
